Devil’s Food Chocolate Cake1 cup almond flour1/4 cup coconut flour1/2 cup coconut sugar1/4 cup cocoa powder2 tablespoons cacao powder (special dark) (or more regular cocoa)3/4 tsp baking powder1/2 tsp baking soda1/4 tsp salt1/2 cup water2 large eggs1 tsp vanilla extract
Preheat the oven to 350* F. Grease the inside of a 8 or 9″ square pan. You could probably make it in a circle pan too. Make 2, and layer them! Oh, the possibilities! Mix all the dry ingredients well; sifting if necessary to remove any lumps. In a separate bowl, mix wet ingredients well. (I used medium eggs, but because the batter is so thick, I would recommend large eggs.) Pour the wet ingredients into the dry and stir until all combined. As mentioned, it will be quick thick. You will need to spread it into the pan and the top may look “lumpy” or uneven. Bake for 15 minutes or until toothpick comes out clean. Don’t worry if it comes out looking “lumpy” too; it gets icing on it!
Chocolate Ganache Frosting2 and 1/2 squares unsweetened baking chocolate (2.5 ounces)1/2 cup milk of choice (unsweetened almond or coconut, or cows) I used raw cow milk.1/2 cup coconut sugar1 tsp vanilla
Melt the chocolate with the milk in a small pan over low to medium heat.Stir constantly till the chocolate is melted, then add coconut sugar and keep stirring until it has dissolved. Remove from heat add vanilla extract. Pour on the cake while still warm, like ganache, or wait for it to cool and thicken and spread it like frosting.

Can I use something other than almond flour? Was already in town. Can’t go back. I have tapioca flour, coconut flour, all purpose flour (all gluten free).

I’ve never tried it with any other sweetener besides coconut sugar; so I can’t guarantee any good results for that. Sorry!
This looks delicious! I noticed there is no oil in either the cake or frosting. How does this work?
To tell you the truth, I don’t know much about how a recipe “works” with or without certain ingredients, but the recipe is correct, there is no oil in it. The cake is very rich, as is the frosting. π
